Domaine Pattes Loup is one of the most exciting estates to emerge from Chablis in recent years. Thomas Pico's commitment to organic farming, hand-harvesting and sorting of his vines where planted by his grandfather in selection massale in the hillsides near Courgis and Preys, the two highest altitude villages within Chablis, with vineyards up to 300 meters. Subtle creamy edge to the focused citrus fruit nose. The palate is vivid and quite mineral with generous pear and citrus fruit. This sense of vitality to the wines and a textured density that can only come from dedicated work in the vineyards and transparent winemaking.
